Imagine beginning your life and growing up pickin’ cotton in a place called Nutbush, Tennessee. Now imagine living your life 60 some odd years later in the south of France in the home of your dreams after spending the last several decades traveling and entertaining the world.
How on earth did somebody from a place called NUT-bush in Tennessee end up in such a wonderful life in the south of France and what on earth took place in between all that time? Ask Tina Turner. She’ll tell ya.
Her victorious life story is the epitome of every downtrodden woman’s dream. She overcame some of the biggest obstacles a woman could EVER have to face, and, as we all know, went on to be one of the greatest female entertainers of all time.
She came, she saw, she conquered…and she didn’t need another hero to do it, either. Spunky woman that she was and is, she demanded that ya betta be good to her because what’s love got to do with it?
What I wouldn’t give now as I creep up on my 50’s to have just a little bit of the energy this woman still had all the way up into her 60’s! She was and still is simply the best! I LOVE IT and her, and so does Hope! So here she is…
Having been born very near there in the late 50’s when Elvis and his music set off an explosion of music rooted in blues, gospel, and country that proliferated into the 60’s, 70’s, and beyond, I know. And I KNEW after clicking on the link to allmemphismusic.com left in a comment by Jon Scott on my post about Elvis that I could go back “home” in time to the River City on the mighty muddy Mississippi and go to the Mid-South Fair, the Cotton Carnival, and back to cruisin’ Summer Ave. again because this is IT!!! This is THE SOUND I grew up hearing all around the Memphis area from tot to teen and all in between!

If you were fortunate enough to grow up there, you’ll remember things like The Twin Drive-in on Summer Ave., Lunati Cams on the hot rods that drag raced down Summer Ave., Robilio’s, cruisin’ the Krystal on Summer Ave., the Thursday and Friday night high school football games at stadiums all over the city, Sunday afternoons in the Spring at either Overton Park, Audubon Park, or Shelby Forest, and who knows what else! Oh! Let’s not forget the skating rinks and roller skating to some of this music and feasting at The Food Fare afterwards. It’ll definitely take ya back!

Are you tired of buying and cooking the same old foods week after week after week? Well, the next time you’re in the grocery store throw a bottle or two of Catalina dressing in your basket. It’s the Star of my Taco Salad, but Catalina’s not just for salads any more. This dressing has been inducted into my refrigerator as a V.I.P. (very important product) member, taking it’s place along side the ketchup and other staples no kitchen should be without. Catalina can put a new spin on a lot of your old favorites, e.g. burgers, and chicken.
Chicken is the most common entrée that blankets the dinner plates around my house, so I’m always looking for new recipes and ideas to mix it up. Adding Catalina dressing (I use Fat Free) to your chicken not only gives it a tangy taste, but also makes for an attractive, yet appetizing, and colorful dish. I grill my chicken in the skillet versus on the grill, but however you prefer, next time coat your chicken with Catalina instead of barbecue sauce.
Recently, I introduced Catalina to my Turkey Burgers. I am a fan of this dressing, but I wasn’t sure if the rest of the hungry mouths at my table would share my enthusiasm, so for it’s debut I only applied it to half of my burgers. Mine were all eaten. See for yourself, or just eighty-six the dressing and serve on a bun with your favorite condiments.
Turkey Burgers
2 pounds Ground Turkey*
½ Cup Ketchup
¾ Cup Dry Oats, not instant
3 Tablespoons Worcestershire sauce
1 Teaspoon Garlic Powder
1 ½ Tablespoons Italian Seasoning
1 Tablespoon Parsley Flakes
Salt & Pepper to taste
Mix well, and pat out into burgers, makes about 8 patties. Cook on medium-high in a non-stick skillet sprayed with cooking spray and add a touch of olive oil. Cook burgers until almost done, reduce heat (medium to medium-low) and coat burgers (if you prefer) on each side with Catalina dressing; allow to cook on each side in the dressing.
*I buy the freshly ground turkey in the meat case, usually found next to the ground beef, not the frozen variety. It comes in three varieties: 85%, 93%, and 99% fat free in most grocery stores.
