I've been cooking on a gas stove for the last 10 yrs so can understand your concern with the issue of more control over the temp of the grill plates. In answer to your concern, I've found that when I go ahead and put the meat on the grill AS it is pre-heating the desired setting I can sear the meat. Just as with electric stoves, you need only adjust your steps and methods for such. @kitchen knives I hear ya. I've used a few of them and really don't think it's that great. It doesn't get hot enough to sear foods. But.. they sell millions of them, so somebody's got to like them.
