Chocolate Sauce aka Chocolate Gravy

This is a winter treat our family loves to pour over a piece of plain yellow cake while the sauce is warm. Many southerners refer to it as chocolate gravy and serve it over warm biscuits for breakfast.

CHOCOLATE SAUCE aka CHOCOLATE GRAVY

INGREDIENTS

2 cups sugar
4 TBSP usweetened cocoa
12 oz evaporated milk (do not confuse with condensed milk)
1/2 cup butter (margarine is ok, but other butter substitutes are not recommended)
1 tsp vanilla flavoring

INSTRUCTIONS

Combine cocoa and sugar and mix well. Stir in evaporated milk. Over medium high heat in a 3 qt or larger sauce pan add butter and stir constantly until sauce comes to a rolling boil. Lower heat just enough to prevent sauce from boiling over while still boiling for about 3-4 minutes. Add vanilla flavoring and continue boiling for 1 more minute.

  1. I tried this as a chocolate base for decorating a plate before you put the dessert on it and it works very well, holding a good shape. I used vanilla-infused sugar rather than essence, by the way. It’s a much more perfumed flavor I think.
